Complex food preparation definition

Complex food preparation means a process wherein multiple food processes are involved in the preparation of a food item, i.e., food is stored, prepared, cooked, cooled, reheated, hot held, and served.
Complex food preparation means the process of preparing a food item that includes two (2) or more complete trips through the temperature danger zone between forty-one (41) degrees Fahrenheit and 135 degrees Fahrenheit.
