Edam Cheese definition
Edam Cheese means the ripened semi hard cheese obtained by coagulating heated or pasteurised milk with cultures of harmless lactic acid producing bacteria, suitable enzymes of non-animal origin or other suitable coagulating enzymes. It shall have a firm texture suitable for cutting with a yellowish colour and may have a hard rind which may be coated with food grade waxes, wrapping of cloth, polyfilm or vegetable oil.
