Old dough definition

Old dough means a fluid or viscous component containing microorganisms (e.g. lactic acid bacteria or yeast) from an earlier generation of old dough of from a mother dough which are active or may be activated. A part of old dough is used for making a scalded starter or dough, while the remaining portion is replenished with batter to feed the fermentation.
