Whey permeate means a source of dairy solids obtained by the removal of protein and some minerals and lactose from whey. The separation is accomplished by ultrafiltration and diafiltration. The product is labeled to reflect protein, ash and lactose content. The acidity of permeates may be adjusted by the addition of safe and suitable pH ingredients.
