Raw shellfish definition

Raw shellfish means shellfish that have not been ther- mally processed to an internal temperature of at least 145°F (62.8°C) for at least 15 seconds (or a temperature−time combina- tion of equivalent lethality), or to an extent that the organoleptic characteristics of the shellfish are altered.
