Lethal rate (L) definition
Lethal rate (L) means the formula L= (10[(T-Tx)/Z])/D used to calculate the equivalent lethality (i.e. equivalent log reduction) at different egg core temperatures in the pasteurisation process at one minute (60 second) intervals as measured using appropriate instruments.
