fresh egg means an egg which has not been subject to any process of cooking or boiling;
fresh egg means the egg in shell that was not conserved by any process and fits in the classification established. This egg loses its designation of “cool” if intentionally subjected to temperatures below 8°C. The recommended storage temperature for fresh eggs is between 8ºC and 15ºC with a relative humidity between 70% and 90%.
