Emmental or ‘Emmentaler’ means hard ripened cheese with round holes obtained by coagulating milk with suitable enzymes of non-animal origin, cultures of harmless lactic acid producing bacteria or other suitable coagulating enzymes. It shall have a light Yellow colour and a firm texture suitable for cutting and may have a hard rind.
