Conceptual Solution. The existing roof‐mounted unit should be replaced with a packaged roof‐top unit with gas‐fired heat and DX cooling. Assuming a ventilated kitchen area of approximately 5,500 to 6,000 square feet there should be an exhaust airflow rate of approximately 4,200 CFM. Therefore, the new unit should be capable of making‐up the air at that flowrate. The cooling capacity for a kitchen of this size will be approximately 10 tons.
