Journeyman. A skilled butcher xxxxxxx who has either served a complete apprenticeship in his trade or has developed equivalent ability by practical experience and is capable of cutting and preparing meat in forms acceptable to the Retail Trade and in a manner that will yield the maximum of profitable cuts from a carcass. He must also be proficient in waiting on customers and have the knowledge and ability to perform the general detailed tasks in the Meat and Fish Department.
