Director of Engineering. The Director of Engineering keeps the building(s), grounds, systems, and equipment functional and maintained. These include fire alarm, sprinkler, and safety systems; air conditioning and heating; plumbing; electrical; lighting; telephone; kitchen equipment and systems; office, hotel, and gaming furniture; painting; gardening and lawn maintenance; carpet repair, etc. He/she also supervises and schedules all engineers and gardeners, and ensures compliance with all building safety and fire inspection requirements. Director of Food and Beverage The Director of Food and Beverage oversees all food and/or beverage outlets and operations including restaurants, bars, room service, and cocktail service. He/she is responsible for the ordering, purchasing, and warehousing of all inventory and supplies; all kitchen operations; the service and quality of all food and beverages; creation of menus; supervision and scheduling of all food and beverage employees including the executive chef, kitchen staff, and servers; uniform and laundry exchange; and handling guest comments and complaints.
